Butcher: Eat Steak on a Hamburger Budget and
Save$$$$

money?
You can do both.
You see virtually every cut of beef and pork
have what I like to call alternative cuts. These are cuts that quite
often come from the same large hunk (primal) but are cut in a
different shape or size than the particular cut you are looking for,
often for less money. You see in the retail meat industry beef and
pork have been merchandised to the hilt. There are hundreds of cuts
of meat in all different sizes and shapes all priced to maximize
profits. There is no need to pay these prices.
You see I'm a butcher, have been for over thirty
years. I'm also a tightwad and I refuse to make a meat purchase
without getting the very best deal I can. Fortunately for me I know
how to do it. Now you can too.

with their money saving alternative cuts for each one. There are
also listings for poultry, lamb and veal and some general helpful
type tips.
Save the purchase price of this book
over and over again.
Example: Say you want a nice steak for dinner,
maybe a juicy rib eye. Boneless rib eyes are anywhere from $6.99 on
sale to well over $10.00 a pound. So go down to your local
supermarket and ask the butcher for a four to six inch boneless
chuck roast. Boneless chuck roasts can be found as cheap as $1.99 a
pound on sale (sometimes even cheaper). Ask him to cut the chuck eye
into 3 or 4 steaks and make stew or hamburger out of the rest. You
see the loin meat starts at the top sirloin and runs along the back
of the animal through the prime rib and into the first several
inches of the chuck. The rib eye and the chuck eye are the same
except the chuck eye tapers off as it goes into the chuck so it will
be smaller and often has heavier marbling which in my humble opinion
makes it even better. You have just saved a bundle! Use one more of
my tips and you will save enough money to purchase an
extra book for a friend!
