Advice From The Butcher Part 1

In the picture above I’ve taken a whole sirloin tip and cut it into as many different cuts as I could think of. As you see there is a lot you can do with a sirloin tip and the best part is they are often on sale.

Here in eastern Idaho a sirloin tip roast can be found on sale as low as $3.99 a pound. I know in other areas of our country beef prices are a lot higher. In fact I was just in Eugene Oregon the other day and stopped at one of those huge national chain supermarkets. I couldn’t believe the prices. The meat was of very good quality but not better than what we sell here in Idaho. But they had marked it up like the cows were raised like they do in Japan. You know, where they feed the cows beer and give them massages while they watch funny cow videos on YouTube.  I really don’t think the cows are getting that kind of treatment here, so why the high prices? It’s simple. The prices are high because people are paying them. There’s no reason to let them gouge you like that.

If you purchase your meat from a reputable supermarket you are going to get good quality. If you watch for the sales you will get good to great prices. You do not have to spend lots of money to get high quality. We sell outstanding prime ribs at my little independent supermarket during the holidays at super low prices. The quality is outstanding and we have built quite a repeat business. But I know people who will spend more than twice what we are asking at a specialty butcher shop or one of those high end stores that cater to people who like to spend money for basically the same thing we have. Just because something is priced higher does not make it better. It’s like this used car salesman said, “over there we have the cars for ten thousand dollars for the people who want to pay ten thousand dollars and over there we have the cars for five thousand dollars for the people who want to pay five thousand dollars.” Somebody will have whatever it is you are looking for.
